Recipe: Chicken Caesar Salad Pizza

One of our staple childhood meals (and one of Josh's favorite meals I cooked for him in college) is the chicken caesar salad pizza.


Half salad/half pizza . . . thats healthy right?
The bad cancels out the good.
It's a win/win situation.

Anyways, it's beyond super easy to make.
The recipe we use is from Pampered Chef.
(Mom used to be a Pampered Chef consultant when we were growing up. Cute, huh?)
It sure made for some spoiled kids when it came to food!

To make this delightful little piece of heavenly pie . . . 
Set the oven to 450 and go ahead and bake your pizza crust (we used the Pillsbury Pizza Crust) until it's slightly brown (10-12 mins).
If you wanna be a beast, you can make your own crust and all that nonsense.
(Before baking we brushed a light layer of olive oil over it first followed by some garlic)

While the crust is baking go ahead and cook 8-10 tenderloins of chopped chicken in a skillet/saucepan with 1/4 cup caesar dressing and 1/2 tablespoon garlic.

Once the crust has finished baking, cover it with some caesar dressing as the "pizza sauce"

Spread the chicken mixture evenly over the crust, then cover with shredded monterey jack cheese, followed by a layer of parmesan cheese.
You can't ever have too much cheese!
This is serious.
It's impossible.

Return the pizza to the oven to melt the cheese, and be careful not to leave it in there too long or you will burn your crust!
. . . and burnt crust means sad kids.

Place some romaine lettuce on top of the pizza, and you are good to go!

Oooo yea it's so easy! And so tasty! I might have butchered the recipe cause we lost the cookbook, but it's pretty easy to improvise!
