My aunt and my cousin Allison got pretty creative with their baking this week.
My other cousin Cara had her bachelorette party on Monday, and my aunt Lori (her mom) channeled her inner Sandra Lee by making someSemi-Homemade Margarita Cupcakes for us to enjoy at the party.
She kindly texted me throughout the whole baking process so check it out . . .
Ingredients:
Yellow cake mix (and ingredients on box)
1/2 box lime jell-o
zest and juice of 1/2 lime
lime fruit slice candy
rock crystal sugar
3 tablespoons of tequila
3 tablespoons limeade concentrate
Icing:
1 stick softened butter
3 oz cream cheese
zest and juice of 1/2 lime
2 tablespoons of tequila
1 drop green food coloring
7 cups powdered sugar
Follow the cake mix directions on the box with added lime jello (half box) & zest and juice of 1/2 a lime.
Once the cake portion as been baked, poke holes in the cupcakes with a toothpick. Combine 3 tablespoons tequila with 3 tablespoons limeade concentrate, and spoon 1 1/2 teaspoon of the mixture over each cupcake once cooled.
For the icing, mix the stick of softened butter, 3 oz cream cheese, zest and juice of 1/2 a lime, 1 drop of green food color, 7 cups of powdered sugar, and 2 tablespoons of tequila.
Cut lime fruit candy slices into small wedges for garnish.
Once the cupcakes are iced, roll the edges in sugar to give them the "salt on the rim" effect.
The bachelorette absolutely loved them!
